  • ½ bunch of spinach
  • ½ cabbage

2. Cranberry Quinoa Salad

People often think of juices or smoothies for detox, but there are plenty of delicious platefuls you can make too. Such as this tasty salad that some will find far more satisfying than drinking a smoothie. This should serve 2 hungry people.

Ingredients

For the salad:

  • 1 cup quinoa
  • 1/4 cup dried cranberries
  • 2 scallions
  • 2 cups green, e.g. spinach and kale

For the Dressing:

  • 1/4 cup cashews
  • 1/8 cup pine nuts
  • 2 tsp miso paste
  • 1/2 tsp honey or agave nectar
  • 1/2 cup water
  • 3 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 2 cloves garlic
  • salt & pepper to your taste

Method

  1. Rinse and cook your quinoa until light and fluffy.
  2. Combine all your dressing ingredients together into a blender, and process them until they are smooth. If it looks a bit thick then just add a little more water – if too runny add a few more nuts.
  3. Chop your scallions and greens, then add them together with the cranberries to a large serving bowl.
  4. Give everything a quick mix. When you’re ready to serve, pour over the dressing, and mix again. Service and enjoy right away.

4. Fresh Cleansing Water Melon Salad

There aren’t many ingredients that give a more refreshing and cleansing feel than fresh watermelon. So let’s combine one into a salad and turn it into a fantastic light nutritious detox meal.

Ingredients

For the salad:

  • 4 cups watermelon, cut into bite sized chunks
  • 1 cup fresh blueberries
  • 6 fresh strawberries, chopped
  • 3 generous cups fresh baby mixed greens

For the Dressing:

  • 2 tsp lemon zest
  • 2 tbsp sesame seeds
  • 1 tsp mustard (dijon is good)
  • 2 tbsp apple cider vinegar
  • 2 tbsp flaxseed oil (optional)
  • salt & pepper to your taste

Method

  1. Add your fruits to a large serving bowl, plus the mixed greens. The greens should be quite small if you managed to get baby leaves, but you can always chop them if they seem too large.
  2. Combine all your dressing ingredients in a small bowl, and whisk.
  3. When ready to serve – trickle your dressing over the salad and toss to combine.
